I am always on the lookout for cooking tips with dehydrated items since I will not have any refrigeration in the truck. I have never been too thrilled with instant mashed potatoes, except for a soup thickener. This recipe was pretty darn good.
Mashed Potato Cakes
2 cups Instant Mashed Potato Flakes / 1/2 cup Flour
1/2 tsp. Garlic Powder / 2 tsp. Dehydrated Onion Flakes
1 Tbs. Parsley Flakes / 1/2 cup Powdered Milk / Salt & Pepper, to taste
2 Eggs, beaten / 1-1/2 cups Water, boiling
Add dry ingredients to a medium sized bowl and mix to incorporate. Add the eggs and water and mix well. Form into individual patties (not too thick) and fry in oil on both sides until browned.
I reduced everything by 1/2, and they were an improvement over regular instant mashed potatoes. I added chopped chives and a sprinkling of chipotle powder. This could be the start of some seriously fun cooking experiments.
Any ideas?
